= Stir Fried Eggs & Sausage =

Bill - Here's where you get a chance to use your wok. This is a good Sunday morning breakfast.

6 beaten eggs
1 teaspoon salt
2 teaspoon Asian sesame oil (readily available, just look for it in the Chinese section)
1 1/2 tablespoons peanut oil (or canola)
3 or 4 sausages, sliced (I used Earl Campbell's sausage, my favorite)
6 green onions, sliced (Or you can use chopped chives, parsley or, maybe you want to add some regular chopped onions and garlic. Use your imagination.)

In a medium-size bowl, whisk the eggs lightly with salt and sesame oil and reserve.

Heat a wok or large frying pan over high heat until it is hot. 

Swirl in the oil, and when it is very hot and slightly smoking, throw in the sausages and stir fry for 2-3 minutes.

Now pour in the beaten eggs and stir fry, stirring constantly, until the eggs begin to set, about 2-3 minutes. 

Toss in the green onions and continue to stir fry another 30 seconds or so. 

Quickly place on a platter and serve immediately.

To round out your breakfast, this dish goes great with French toast/ with honey, maple syrup or confectioners sugar.
