= Blue Cheese Dressing =

There are a few things in life that everyone finds necessary.  One of those is a good Blue Cheese Dressing:

1 1/2 teaspoons apple cider vinegar
3/4 teaspoon dry mustard
3 tablespoons fresh parsley, finely chopped
1 tablespoon sugar
3/4 teaspoon ground white pepper
3 Cup mayonnaise (Hellman's preferred)
1 pound blue cheese, crumbled
3/4 Cup sour cream
1 1/2 teaspoon Worcestershire sauce
1/3 Cup buttermilk

Mix the dry ingredients with vinegar.  Add other ingredients and blend well.  Thin to your personal taste with buttermilk, 1/4 to 1/3 cup.

NOTE:  Beware of "chunky" blue cheese in the stores. The processing heat necessary to kill the bacteria and make the dressing "shelf stable" is high enough to melt the real cheese.  If it is sold unrefrigerated the "chunks" you see are a soy product (like tofu) that has a higher melting point than real cheese, but it is added to the recipe to fool your mouth.
