PARAGOULD CHESS PIE FROM MARY ALICE

4 eggs, beaten lightly
1 1/2 Cup Sugar
1 stick butter, melted
1 teaspoon Lemon Juice (You might want to go to a tablespoon of lemon juice and use the zest of 1 lemon on top of the pie. So sayeth a Flat Possum researcher who incinerated two of these pies in one day.)
1 teaspoon Vanilla
1 unbaked pie crust
Beat eggs lightly, add sugar, lemon juice, vanilla and add melted butter last. Blend and pour into the unbaked pie crust.
Bake at 325 deg. for 1 hour.
This is good stuff.
